Dream Laundry Room!

Pinterest supplied me with my dream laundry room. A sink, plenty of space, cabinets for storage and counter tops for sewing and crafts. When we moved this is what I had in mind for my laundry room.

This is what I got. Three cabinets above the washer and dryer enclosed behind folding doors. No sink, no counter top, no place for sewing or crafts. A laundry closet!

I was not a happy camper. As I was studying Jonah I realized I needed to change my perspective. I decided to focus on what I have instead of what I don't have. I have hot water, detergent, the ability to pay my electric bill, and so many clothes. I chose to see it as an invitation to create a more efficient space.

Once I changed my perspective, my attitude improved. I determined the cabinets were sufficient to hold the necessary laundry supplies. The tops of the washer and dryer could serve as my counter to fold clothes. The only thing I really needed was a rod to hang the clothes on to dry. There wasn't enough room for a rod between the cabinets and the door. The hall was too small to accommodate a standing clothes dryer. For the first few weeks I made do by putting hangers on the door knobs. It forced me to put the clothes in the closet as soon as they were dry instead of using the laundry room as a second closet. 

And then it occurred to me as I was looking at the clearance shelves in Kirkland's....


This $12 thingie hung on the opposite wall was perfect for my needs! When not in use as a laundry tool, it was decorative and unobtrusive! i was so excited. An efficient, attractive solution. I have everything I need and the clothes are always put away! 

I changed my perspective and I am more than satisfied with what I have!

Jonah Navigating a Life Interrupted, written by Priscilla Shirer, Navigated by Me!

"How do you see your life being interrupted in the next seven weeks as we study Jonah?" the bible study facilitator asked.

"Bahaha! Are you serious right now? I am Jonah. We thought we would retire in our lovely, comfortable home of thirteen years in a Dallas suburb. Atlanta wasn't even on our radar.
For two years we prayed the Prayer-that-Never-Fails-"Thy Will be Done" and for favor as my husband's company pursued a merger with another company. The failed merger led to reorganization of the company and elimination of his job. At age 62 he fully expected to be given a retirement package. Instead he was given a promotion which required a move to Atlanta.
My family is in Texas. I have four granddaughters in Oklahoma. (Yes, I have a daughter and son-in-law there too, but we all know who really counts). I didn't want to leave Texas. However you don't pray for favor and then tell God, "Oh, but not Atlanta!"

I moved AND downsized kicking and screaming. I didn't want to leave my family or my friends. I didn't want to leave my church and support group. I didn't want to leave a long list of medical providers. Starting over is rarely fun, but certainly not when you've reached the age where they no longer ask for your I.D. to give you the Senior Discount. Once upon a time all I needed was a general physician and occasionally an OBGYN. Now I require a list of specialists to hold me together.

 He has already granted me favor in the smallest of things. Someone who cuts my hair right! The first time! That, my friend, is what I call a miracle!! 

The house I was certain was much too small is perfect. Yes, I'm using three closets to hold my abundant collection of clothes and accessories, but I'm cleaning it myself and using my runs up and down the stairs as cheap gym membership.

I "happened" upon this women's bible study when all the others I look into were finished until fall. Could the subject matter be more appropriate for me? No.

So I thank Him for the interruption in my life and look forward with anticipation to what He has in store for me. I'll let you know how it's going, but so far obedience has paid off. I'm not in the belly of a whale!

WINTER ONEDERLAND!!!



WINTER ONEDERLAND!!!

To celebrate my granddaughter's first birthday in early January, my daughter gave me her ideas (via Pinterest) for a Winterland Onederland theme. All I need is a theme and my little brain is smokin'! I put on my shopping shoes and scoured after-Christmas sale bins to decorate on a budget. 
My niece Ashley made the beautiful banner. Find her on Facebook at Looks Like A Party. She is reasonably priced and does beautiful work. She took everything my daughter and I had accumulated and turned it into a spectacular display.The milk glasses dishes were gathered from various family members. The other grandmother made the smash cake for the birthday girl and cupcakes for her guests. So what I'm trying to say is that it was a team effort!

This beauty was marked waaay down to $9 because
a wood flower was missing. I slapped a bow on
it and called it good! 


The sleigh, also in the bargain bin, held pine cones and potpourri. I re-purposed it to hold plates. I found the tablecloth, runner, plates, and napkins 50% off in the wedding section of Hobby Lobby.


The glitter-coated pine cones from the sleigh, silver candles, and battery-operated tea lights turned a wooden box into a sparkly centerpiece.

Our Hot Chocolate Bar was big hit! The kids loved adding crushed peppermints, all sizes of marshmallows, and gobs of whipped cream to their to their cups. I saw more than one adult snag a handful of marshmallows just for the pure joy of eating them.


My proudest accomplishment was making the whipped cream can blend with the rest of the decor. We couldn't have a red and white can in the middle of our winter wonderland.  ;)

Can you believe I came across the snowflake-shaped white chocolate covered pretzels at Braums?!! We stopped to get the girls a cone and there were the pretzels at the check-out counter.


Penguin punch and thawed ice were available for those so inclined.

Chocolate chip cookies and  glazed spritz cookies accompanied hot chocolate cheesecake dip. Recipe below.  


The birthday girl and one of her older sisters, T-Bug, helped me make several batches of spritz cookies. We used the recipe on the back of the box. the cookies lacked sparkle. I made a little glaze to hold on edible glitter. A white Sixlet from the wedding department adorned the top. Now these cookies were worthy of the Winter Onederland theme. We kept the food simple and recruited plenty of help to make the day a huge success.

HOT CHOCOLATE CHEESECAKE DIP
Ingredients

Baking & Spices
  • 4 oz Cool Whip
  • 2 tbsp Vanilla mini-mallow bits

Dairy

  • 1 (8 oz.) package Cream cheese

Desserts

  • 4 (.73 oz) envelopes Cocoa mix without marshmallows.

The perfect dip for your cookies! It's filled with tiny marshmallows and hot cocoa flavor. Next time I would add more Cool Whip and mini marshmallows.

PEANUT BUTTER SHEET CAKE

 I can't believe May is almost over. Summer is here. I've been promising this recipe since March. It's not to late to make this yummy, quick and easy cake for your pool parties and picnics. I made this for several large groups this spring. I also made my Texas Chocolate Sheet Cake. Stack a piece of each on top of each other and you have a little taste of heaven!


Gather your ingredients.

In a medium pot add the peanut butter,
water, and butter.

Bring to a boil and remove from heat.

In a separate bowl, mix together the sugar, brown sugar,
flour, salt, and baking soda with a fork.

 Add to the peanut butter mixture.
Add the eggs, buttermilk, and vanilla to the bowl.

Mix well.
Pour into greased and floured, or parchment-lined
jelly roll pan (12x17 pan). Bake for 15 minutes at 375 degrees

Gather the ingredients for the frosting.

In a small pot bring the butter, buttermilk, and peanut butter to a boil. 
Remove pan from the heat

Add the powdered sugar 

and vanilla.

 Mix well.

 Pour frosting over the warm cake.

Cake Ingredients
o    1/4 cup creamy peanut butter
o    1 cup water
o    1/2 cup butter
o    1 cup sugar
o    1 cup brown sugar
o    2 cups flour
o    1 teaspoon salt
o    1 teaspoon baking soda
o    2 eggs
o    1/2 cup buttermilk
o    1 teaspoon vanilla

Frosting Ingredients:
o    3/4 cup butter
o    6 Tablespoon buttermilk
o    1/2 cup peanut butter
o    3 1/2 cups powdered sugar
o    1 Tablespoon vanilla
Instructions
1.      Preheat oven to 375 degrees.

2.      For the cake: In a medium pot add the peanut butter, water, and butter and bring to a boil. Remove from heat.

3.      In a separate bowl, mix together the sugar, brown sugar, flour, salt, and baking soda with a fork. Add to the peanut butter mixture.

4.      Add the eggs, buttermilk, and vanilla to the bowl and mix well.

5.      Stir well and pour into greased or parchment lined cookie sheet pan with a little edge (12X17 jellyroll pan).

6.    Bake for 15 minutes at 375 degrees.

7.      For the Frosting: In a small pot bring the butter, buttermilk, and peanut butter to a boil. Remove pan from the heat and add the powdered sugar and vanilla. Pour frosting over the warm cake.

Crock Pot Scrambled Eggs

Easter is coming which means company for the weekend. Some wake up early and are ready to eat. Others move more slowly and like to have their coffee before entertaining the thought of food. I like to make them all happy. With this recipe I can. It's easy to throw together and can be kept warm in your slow cooker for up to four hours.
I usually make a double recipe since I have some hearty eaters (read "men"). Leftovers can be turned into breakfast burritos for a quick on-the-run breakfast during the week.

Make – Ahead Scrambled Eggs

8 slices bacon (or 1 package of real bacon bits)
3 T. margarine or butter
16 eggs
1 C. half-and-half or milk
½ t. salt
¼ t. pepper
1 (10 3/4 oz.) can condensed cream of mushroom soup or cream of chicken soup
2 T. chopped fresh chives (opt.)
4 Italian plum tomatoes, quartered, sliced (opt.)
1 (8 pkg.) pkg. (3 cups) sliced fresh mushrooms (opt.)
8 oz. (2 cups) shredded Cheddar cheese

·        Cook and crumble bacon
·        Cook mushrooms until tender (if using)
·        Melt margarine or butter in skillet
·        Beat eggs in large bowl
·        Add half-and-half and salt and pepper to eggs
·        Cook eggs in skillet until firm but still moist
·        Stir in soup and chives (if using)
·        Place half of egg mixture in 3 ½ or 4 quart slow cooker (crock pot)
·        Top with half each of the cooked mushrooms, tomatoes, cheese and crumbled bacon
·        Repeat layers
·        Serve immediately, or cover and keep warm on low setting for up to 4 hours

  • Makes 12 3/4 cup servings.
Never be afraid to ask for help! My husband usually cracks all
the eggs for me. Sometimes we prepare the egg mixture the night
before so all we have to do is scramble the eggs in the morning.

While he is cracking the eggs, I assemble the rest of
the ingredients and measure out the milk.
NOTE: I buy shredded cheese and bacon bits.

Once you have scrambled the egg/milk mixture, stir in the
condensed soup. My kids don't like mushroom, so I've been
known to use cream of chicken, onion or cheddar cheese soup.

To make clean-up easy I use a slow-cooker liner.
Place your egg mixture in the bottom.

Top with bacon bits.
Top with shredded cheese. Repeat.
Cover and set cooker on warm.
Let the cheese melt before serving.
Because there are always a few selective eaters I make this recipe as plain as possible--no chives, mushrooms or tomatoes. For those of us who like a little kick in the morning, I serve salsa on the side. A little toast, fresh fruit and a hot beverage rounds out an easy brunch.
I tripled the recipe to serve at Mom's Bible Study yesterday. The young mom's loved having a little protein to start their morning. Enjoy and Happy Easter!

GRAHAM STREUSEL CAKE


My son is not one to eat many sweets. In fact, he asks for pie on his birthday, not cake. He loves this cake because it's nice and light.
This is my go-to recipe when I need a easy coffee cake for a ladies coffee or lunch. Great after a meal, it's even better as a pick-me-up with a cup of coffee in the middle of the afternoon.
Struesel Topping Ingredients (chopped nuts were omitted on this occasion)

Cake ingredients

Melt butter. Mix together with cinnamon, brown sugar, chopped pecans, and graham crackers crumbs for topping.

Mix until crumbly

Mix cake ingredients together as directed on back of the box.

Beat for three minutes on medium speed

Pour half of cake mixture into greased 9x13 pan.

Cover with half of crumb mixture

Continue with remaining cake mixture

Finish with remaining half of crumb mixture. BAKE at 350 for 30-40 minutes.

For glaze combine powdered sugar and water.

Stir until smooth

Remove baked cake from oven when toothpick inserted in the
middle covers out clean

While still warm, drizzle glaze over top.
Graham Streusel Cake
TOPPING:
2 cups graham cracker crumbs
¾ cup chopped nuts
¾ cup brown sugar (packed)
1 ¼ teaspoons cinnamon
¾ cup butter, melted
CAKE:
1 package white cake mix
1 cup water
¼ cup vegetable oil
3 eggs
VANILLA GLAZE:

Mix 2 cup powdered sugar 
1 to 2 tablespoons water until desired consistency.
